Job Scope

The Assistant Bar Manager supports the smooth, efficient, and profitable operation of the bar while maintaining Cocoon Resort’s service standards, brand reputation, and values. The role assists in supervising, coordinating, and supporting all bar service activities to ensure high guest satisfaction and operational excellence. The position is responsible for maintaining high beverage service standards through strong guest engagement, product knowledge, and active support of daily bar operations in line with resort Standard Operating Procedures (SOPs).

Key Responsibilities

General Responsibilities

  • Perform duties in accordance with the Standard Operating Procedures (SOPs) and resort guidelines.
  • Maintain high standards of personal appearance, grooming, hygiene, and uniform at all times.
  • Carry out all tasks and responsibilities professionally.
  • Be punctual and report to duty on time.
  • Stay organized and ensure all bar tools, equipment, and supplies are ready before service.
  • Ensure excellent guest service by being attentive, responsive, and proactive.
  • Support team members in daily operations to maintain smooth service flow.
  • Monitor hygiene, health, and safety standards in all bar areas.
  • Assist in controlling breakages, wastage, and stock losses.
  • Perform any additional duties assigned by management.


Specific Responsibilities

  • Report to duty on time at the assigned outlet in full uniform.
  • Assist the Bar Manager in supervising and managing daily bar operations.
  • Lead, direct, and support bartenders and bar team members to ensure smooth operations.
  • Ensure all beverages are prepared and served according to resort standards and recipes.
  • Maintain high standards of service quality and guest satisfaction at all times.
  • Meet and greet guests and handle complaints or concerns professionally.
  • Ensure all team members follow grooming, hygiene, and service standards.
  • Support staff training, coaching, and performance development.
  • Ensure fair task distribution among bar team members.
  • Monitor stock levels, place requisitions, and report shortages.
  • Assist in monthly inventory counts and stock control procedures.
  • Monitor beverage cost, wastage, and breakages to maintain budget targets.
  • Promote and upsell cocktails, premium beverages, wines, and special promotions.
  • Ensure proper storage and handling of beverages and bar supplies.
  • Maintain cleanliness, hygiene, and safety standards at the bar at all times.
  • Ensure all bar equipment is used correctly and maintained properly.
  • Coordinate with kitchen, stewarding, restaurant, housekeeping, guest relations, and engineering for smooth operations.
  • Ensure mise-en-place is completed and the bar is fully prepared before service.
  • Maintain full knowledge of all beverage menus, cocktails, wines, and promotions.
  • Ensure accurate billing, posting, and cash handling procedures.
  • Attend meetings, briefings, and training sessions as required.
  • Share guest feedback and operational updates with the team.
  • Lead by example in professionalism, teamwork, and service standards.
  • Perform any additional duties assigned by the F&B Manager or Bar Manager.


Key Performance Indicators (KPIs)

Guest Feedback

  • Description: Monitor service quality and maintain high guest satisfaction standards.
  • Target: Achieve a minimum of 3 positive guest reviews or mentions each month.

Grooming & Standards

  • Description: Ensure all team members follow grooming, hygiene, and service standards.
  • Target: Maintain full compliance with resort grooming and uniform standards at all times.

Hygiene & Compliance

  • Description: Monitor hygiene, health, and safety standards in all bar areas.
  • Target: Ensure food safety, hygiene, and HACCP compliance with a minimum score of 85% or above.

Revenue & Upselling

  • Description: Promote and upsell cocktails, premium beverages, wines, and special promotions.
  • Target: Support achievement of bar revenue targets through upselling and promotions.

Cost Control

  • Description: Monitor beverage cost, wastage, and breakages to maintain budget targets.
  • Target: Control beverage cost by reducing waste, breakages, and over-pouring.

Budget Management

  • Description: Assist with stock control and beverage cost management to support the bar’s profitability.
  • Target: Ensure operations remain within the approved budget and cost targets.

Inventory Management

  • Description: Assist in monthly inventory counts and stock control procedures.
  • Target: Maintain proper stock control and minimize losses.

Financial Accountability

  • Description: Ensure accurate billing, posting, and cash handling procedures.
  • Target: Ensure accurate billing and POS transactions with full accountability.

Team Training

  • Description: Support staff training, coaching, and performance development.
  • Target: Support team training by ensuring each team member completes at least 4 hours of training per month with 90% attendance.

Asset Management

  • Description: Ensure all bar equipment is used correctly and maintained properly.
  • Target: Ensure proper handling and maintenance of bar equipment to reduce damages and losses.

Performance Coaching

  • Description: Lead by example and support team performance development.
  • Target: Provide regular feedback and coaching to improve team performance and service standards.
